Super Easy Air Fryer Veggie Egg Bake

This super easy recipe is sure to become a staple in your house for those busy summer schedules or a quick healthy breakfast.

Equipment

  • Air Fryer
  • Parchement paper or air fryer paper liner

Ingredients
  

  • 1/4 cup cherry tomatoes
  • 1/4 cup mushrooms
  • 1/8 cup onion or to your liking
  • 1/2 cup Spinach chopped
  • 2 whole eggs
  • 3 oz ground turkey, chicken or beef *Meat is optional. May have to add additional cook time when adding meat.
  • pinch salt season to your liking.
  • Pepper
  • 1/8 tsp Garlic Powder

Instructions
 

  • Preheat air fryer to 390 degrees for 3 minutes
  • Chop all veggies and set aside
  • Crack eggs into a small bowl, sprinkle with salt, pepper and garlic powder
  • Whisk eggs and seasoning until well combined
  • Place liner in the air fryer and pour in egg mixture
  • Add veggies and meat
  • Cook at 390 for 12 minutes. If your adding meat you may need to add additional cook time.
  • Remove from paper onto a plate and add your favorite hot sauce, salsa, avocado salsa or guacamole.
