- 1 Rotisserie Chicken
- 1 Tbsp Olive or avocado oil
- 3/4 Cup Water
- 1 Head Lettuce
- 1 Tomato
- 1 Avocado
- 1 Jar Salsa
- 1 Cup Rice (Jasmine, white, or brown rice) Cooked according to package
- 1-2 Tbsp Taco seasoning Recipe below
Homemade Taco Seasoning
- 4 Tbsp Chili powder
- 2 Tbsp Cumin
- 3 Tsp Black pepper
- 2 Tsp Paprika
- 1 Tsp Onion powder
- 1 Tsp Garlic powder
- 1 Tsp Oregano
- 1/4 Tsp Cayenne Pepper *Optional
Rotisserie Chicken Taco Bowl
Remove meat from chicken breast and shred in a medium sized bowl
Heat a large skillet with 1 tbsp of olive/avocado oil
Add shredded chicken, water and taco seasoning (recipe below) to skillet. Stir and cook until water absorbed
Prepare rice according to package
While rice is cooking, cut up lettuce, tomato and avocado
Once rice is cooked add your desired serving size to a bowl. Top with shredded chicken, lettuce, tomato, avocado and salsa
