Finding time in my busy schedule to make a healthy dinner can be a challenge. Thats why I’m going to share this Super Easy Air Fryer Veggie Egg Bake.
Let’s be honest, it is a challenge to make a meal let alone a healthy one during those crazy busy summer months. It’s so easy to grab something quick, which usually means it’s not the healthiest. Don’t get me wrong some nights for my own sanity that is necessary, however I like to eat healthy most nights of the week and save a special meal for one night a week with my family.
This super easy air fryer egg bake has become a staple during our 3 night in a row baseball stretch. Pair it with some avocado toast or a bowl of your favorite oatmeal and call it good. Did I mention we love breakfast for dinner!
This however is not limited to dinner. You can also make this for a quick and easy breakfast. The air fryer is super convenient, just pop it in the air fryer and it’s done by the time you get out of the shower.
The best part about this besides the fact that it’s so quick is that you can add whatever ingredients you want. I list my favorite ingredients below but you can tailor it to fit your taste.
You can also top it with your favorite hot sauce, salsa, avocado salsa or guacamole. I do not eat dairy but if you wanted to you could top it with your favorite cheese for the last minute of cooking.
Another great addition to this egg bake is our easy air fryer potatoes . Make these in advance and just rewarm them while your egg bake is cooking.
Finally, let’s not forget about the clean up. You can use regular parchement paper in your air fryer however, you do have to make sure to cut the paper to the right size so that the egg doesn’t fall into the bin and also so you don’t burn the paper.

Super Easy Air Fryer Veggie Egg Bake
Equipment
- Air Fryer
- Parchement paper or air fryer paper liner
Ingredients
- 1/4 cup cherry tomatoes
- 1/4 cup mushrooms
- 1/8 cup onion or to your liking
- 1/2 cup Spinach chopped
- 2 whole eggs
- 3 oz ground turkey, chicken or beef *Meat is optional. May have to add additional cook time when adding meat.
- pinch salt season to your liking.
- Pepper
- 1/8 tsp Garlic Powder
Instructions
- Preheat air fryer to 390 degrees for 3 minutes
- Chop all veggies and set aside
- Crack eggs into a small bowl, sprinkle with salt, pepper and garlic powder
- Whisk eggs and seasoning until well combined
- Place liner in the air fryer and pour in egg mixture
- Add veggies and meat
- Cook at 390 for 12 minutes. If your adding meat you may need to add additional cook time.
- Remove from paper onto a plate and add your favorite hot sauce, salsa, avocado salsa or guacamole.
