This easy rotisserie chicken taco bowl is super easy and is made of staple ingredients that we have on hand most of the time.

I used my homemade taco seasoning to flavor the meat, which I will share with you below.
Here is my quick, easy, inexpensive Rotisserie chicken taco bowl, perfect for any night you’re short on time. It also is great as leftovers. I typically pack it for my lunch the next day.
Easy Rotisserie Chicken Taco Bowl
Ingredients
- 1 Rotisserie Chicken
- 1 Tbsp Olive or avocado oil
- 3/4 Cup Water
- 1 Head Lettuce
- 1 Tomato
- 1 Avocado
- 1 Jar Salsa
- 1 Cup Rice (Jasmine, white, or brown rice) Cooked according to package
- 1-2 Tbsp Taco seasoning Recipe below
Homemade Taco Seasoning
- 4 Tbsp Chili powder
- 2 Tbsp Cumin
- 3 Tsp Black pepper
- 2 Tsp Paprika
- 1 Tsp Onion powder
- 1 Tsp Garlic powder
- 1 Tsp Oregano
- 1/4 Tsp Cayenne Pepper *Optional
Instructions
Rotisserie Chicken Taco Bowl
- Remove meat from chicken breast and shred in a medium sized bowl
- Heat a large skillet with 1 tbsp of olive/avocado oil
- Add shredded chicken, water and taco seasoning (recipe below) to skillet. Stir and cook until water absorbed
- Prepare rice according to package
- While rice is cooking, cut up lettuce, tomato and avocado
- Once rice is cooked add your desired serving size to a bowl. Top with shredded chicken, lettuce, tomato, avocado and salsa
Taco Seasoning
- Add all ingredients into a small mason jar. Screw on lid and shake to mix. Add 1-2 tbsp per pound of meat.
