My kids absolutely love these flavorful potatoes. They love them so much that they are the main request for our weekly family breakfast, sometimes over waffles. Yeah I know, crazy right?!

Anyways, with our after school activity schedule beginning to ramp back up, I need meals that easy to prepare and take little time to cook. Plus, it has to be something that will keep my kids full.
This seasoned potato recipe does just that and has become a staple in our weekly dinner menu. For this recipe all you need is baby red potatoes and a few spices, and you have a delicious side to any meal.
Add these potatoes to:
Breakfast: Like I said above you can add these potatoes as a tasty side to your family breakfast along with your eggs and sausage.
Taco Bowl: top them with taco meat, lettuce, tomatoes, avocado and salsa for a mouthwatering taco bowl.
Breakfast Bowl: add them to scrambled or a fried egg, black beans, avocado and hot sauce for a hearty breakfast bowl
What you will need:
- 2 1/2 lbs baby red potatoes or my favorite a mix of baby red and yellow potatoes, cut in half to quarter size pieces depending on the size of the potato.
- 2 tbsp of olive or avocado oil
- 1 tsp salt
- 1 tsp pepper
- 3/4 tsp garlic powder
- 3/4 tsp paprika
- 1/2 tsp onion powder
How to make these super easy air fryer potatoes:
- Preheat your air fryer to 400 degrees for 2-3 minutes.
- Cut baby potatoes in half to quarter size pieces depending on the size of the potato, and place them in a mixing bowl.
- Drizzle with 2 tbsp of olive or avocado oil.
- Add salt, pepper, garlic powder, paprika and onion powder to the bowl.
- Mix potatoes, oil and seasonings until fully coated.
- Divide into 2 batches if using a single bin air fryer or between 2 bins if using a dual zone air fryer. We love our Dual Zone Air Fryer by Ninja (link below)
- Cook at 400 degrees for 18- 20 minutes, tossing potatoes half way through to make sure they cook evenly.
- Poke with a fork to make sure they are soft and crispy. Cook for an additional 2-3 mins if not fully cooked.

Ingredients
- 2 1/2 Lbs Baby red or mixed potatoes
- 2 Tbsp Olive or avocado oil
- 1 Tsp Salt
- 1 Tsp Pepper
- 3/4 Tsp Garlic powder
- 3/4 Tsp Paprika
- 1/2 Tsp Onion Powder
