These easy blender oatmeal banana pancakes are just that; quick, easy, and delicious. I usually make extra for the rest of the week for breakfast or snacks.
You can store them up to 7 days in an airtight container and just reheat in the microwave.
Ingredients
Quick Oats/Gluten Free quick oats: I like to use quick oats because they seem to blend better than old fashion oats.
Oats are a whole grain which means they are a filling fiber that also helps regulate your cholesterol. It also means it keeps you fuller longer.
Ripple Milk/Almond Milk/Other milk of choice: We love Ripple milk. It is a dairy free milk alternative that is made of chickpeas. We also have some tree nut allergies in our family so this is the perfect nutritious alternative
Ripple is 100% vegan, soy, gluten, lactose and nut free. It’s rich, creamy and delicious and it has 8 times more protein than other nut milks.
It also is packed with nutrition. Each serving has 8g protein and 50% more calcium than dairy milk, more vitamin D and half the amount of sugar.
My favorite part is that I can use it in all my favorite recipes just like I would if I used dairy milk.
Banana
Not only are they great to bake with, I mean I love a good slice of banana bread on occasion, bananas are packed with potassium, fiber and are good for your gut.
Cinnamon
I swear we put cinnamon on everything. Ok, maybe not everything but we love it on toast, oatmeal, waffles, and sweet potatoes.
There are numerous benefits of cinnamon including increasing your metabolism, not to mention it gives your meals a burst of flavor
Honey
We love honey and we love to add it to our baked goods, oatmeal, pancakes and more as a natural sweetener.
It is packed full of amino acids, vitamins, minerals, and antioxidants. It can also be used as an anti-inflammatory, antioxidant and antibacterial agent.
We especially like to use it during cold season as a natural cough suppressant.

Easy Blender Oatmeal Banana Pancakes
Equipment
- 1 Blender
Ingredients
- 2 Cups Quick Oats/Gluten quick oats
- 1 1/4 Cups Ripple/almond or other milk of choice
- 1 large Banana
- 1/2 Tsp Ground cinnamon
- 1 Tbsp Honey
- 1/4 Tsp Sea Salt
- 1 Tsp Pure Vanilla Extract
- 1 1/2 Tsp Baking powder
- 1 Large Egg
- 1 -2 Tsp coconut oil or butter for cooking
Instructions
- Place all ingredients, except egg and coconut oil in the base of a blender and blend until smooth. Add egg and pulse a few times until egg is fully incorporated.
- Heat a griddle or large sauté pan over medium heat and melt a teaspoon or two of coconut oil. When hot, pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake.
- Brown on both sides (about 2-3 minutes per side) and serve hot with maple syrup.
- **If batter becomes too thick to pour easily, add a tablespoon or two of milk to thin.
